Alaskan Salmon Burgers

2 lbs. cooked Alaskan Salmon*
½ cup diced onion
½ cup diced celery
¼ cup chopped fresh parsley
2 cups fresh spinach leaves
¼ tsp mace
salt and pepper to taste
2 eggs
½ cup heavy cream
½ cup panko bread crumbs

Directions:

Flake the salmon into a large bowl. Sauté the onions, celery, parsley, spinach and spices. Add to the prepared salmon along with the eggs, cream, and bread crumbs. Let mixture rest for 1 hour.

Form salmon into 6 burger patties. Sauté in a pan with a small amount of olive oil until lightly browned on both sides then bake for 10 minutes at 450 degrees to finish. Serve on your favorite burger bun with lemon mayonnaise** and more fresh spinach. Serves 6

 

*you can use left over cooked salmon or cook it just for this recipe. To cook, place the salmon on a sheet pan. Drizzle with white wine, salt, pepper and olive oil. Bake for 15 minutes at 375º for 12-15 minutes (until just done and flakey). Chill before assembling burgers. ** lemon mayonnaise - combine 1 cup mayonnaise, 1 T fresh lemon juice, 2 dashes tobasco.
