Jack London Wild Ferment Cabernet Sauvignon 2022

Our winemakers fermented this wine with only the yeasts that are naturally present on the grape skins and did not add commercial yeast. The yeast of the native terroir creates a wine with impressive structure and complexity that truly reflects the unique character of the vineyard.

WINEMAKERS NOTES

2022 featured several curve balls from Mother Nature with frost in the spring, continued drought conditions and a large heat spike in early September. The historic Jack London Vineyard handled the conditions well and this Cabernet was picked at optimum ripeness. The grapes were hand harvested in the early hours of September 20th and were cold soaked for several days before the native yeasts took hold and began their journey of transformation. The wine was aged 20 months in 33% new French oak, 10% one year old French oak and 57% neutral French oak barrel.
