GRILLED BURGER WITH PEPPER JACK CHEESE

INGREDIENTS

  • 1.5 pounds ground beef (80/20 ratio of meat to fat)
  • 2 onions – sliced (grilled or caramelized in skillet)
  • 4 slices applewood smoked bacon – cooked
  • 4 slices pepper jack cheese
  • 4 brioche buns – split
  • 4 butter lettuce leaves
  • 1 tomato – sliced into 4 slices
  • dill pickle slices or bread and butter pickles

Chipotle horse radish sauce

  • 1/2 cup mayo
  • 2-3 T chipotle in adobo sauce – If you prefer extra spicy include chopped peppers.
  • 2-3 T prepared horseradish

DIRECTIONS

In a small bowl combine all ingredients and taste, adjust if needed to desired spiciness. Refrigerate.

If caramelizing onions in a skillet – heat skillet, add olive oil and cook onions with salt and pepper until brown and caramelized – about 10-15 minutes. Cook bacon to desired crispiness. Season meat with salt and freshly ground pepper. Form into 4 patties.

Heat grill and oil grates. If grilling onions, brush with oil, salt and pepper both sides, place on grill and cook 5-7 minutes per side until beginning to caramelize. Grill burgers for 4-5 minutes per side (medium rate) longer for desired doneness – add cheese and melt. Toast buns.

Prepare buns with sauce, add burgers, onions, bacon, lettuce, tomato and pickles.
